WHere is a simplified interpretation of a beverage found on our latest menu. It's a party-sized pre-mixed which is bursting with the tastes of the festive period, rendering it excellent for hosting a festive gathering. Any leftover syrup for breakfast cocktails, desserts, or to make another batch of bikinis.
The Bikini Cocktail
Makes enough for 10 people
Ingredients for the Citrus Syrup (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar
For the Cocktail (makes 850ml, enough for 10)
400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (see above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish
Method
To prepare the Cordial: Combine every ingredients inside a pan, heat until it reaches a light boil, stirring to dissolve. Then, turn off the burner allowing it to reach room temperature fully. Pour to a sterilised bottle, close it and store chilled, it can be stored for about one month.
To make Batch Mix: Combine every liquids into a large bottle, leave to sit for 60 minutes, then filter it best through a fine cloth, making it fully clarified.
When ready to serve: Pour 85ml from the cocktail base to a stirring glass packed with ice, gently stirring lightly for a minute to chill. Strain into an cold coupe glass or a similar vessel, decorate with the cranberries adding the final touch by giving it a light spray with the mandarin essence over the drink.
